Healthy Low Carb Pesto Poached Chicken With Cauliflower Rice.

Since I discovered cauliflower rice a few weeks ago I’ve been eating it like a theoretical Alsatian eating Bridget Jone’s face. Seriously this shit is bananas. One of my favourite recipes of all time is this Pesto and Chicken Quinoa dish and I make it all the time. Well that was until the internet made me feel bad about eating quinoa and now I’m confused. I digress, anyway I generally try to keep my eating as grain free as possible so I adapted my old favourite into a fancy new dish starring my new best friend – cauliflower rice.

What You Need

(serves 4)

1 head of cauliflower, grated (seriously just go all cheese grater on the mofo. Works like a charm)

2 large chicken breasts

1 head of broccoli, slightly steamed (or green beans if your supermarket sucks and never has broccoli)

1 jar of basil pesto (or you can be fancy and make it yourself)

1/4 cup of raw pepitas (this ingredient is technically optional but I strongly suggest you include it. DELICIOUS!)

What You Do

1. The method of poaching chicken in the original recipe is rubbish so I use this method. Simply place two chicken breasts, all snug and cuddly, in the bottom of a heavy saucepan. Cover with water and add a few bay leaves and a cube of chicken stock. Bring to the boil. Immediately reduce heat and simmer partially covered for ten minutes. Remove from heat, cover completely and let sit for 20 minutes.

2. Take your grated cauliflower and lightly steamed broccoli and stir fry in a wok for a few minutes.

3. Using a small pan, lightly and quickly fry the pepitas in a splash of oil.

4. Add chicken, pesto and pepitas to the wok and quickly toss to coat in pesto then serve.

It’s a perfect summer dish because it cools down quite quickly. It also reheats quite well so be sure to save your left overs for lunch!

    Wow! I just read the article on the quinoa – I’m feeling your feeling bad! I had no idea so thanks for adding the link! Will be trying your recipe tomorrow night for dinner – have always felt a bit weird about poached chicken but it’s looking too yummy not to try!!
