Have you ever flippantly made a promise that you’d bring a fancy dessert to a dinner party and then completely forgot all about it? Then you find yourself with half an hour before the party and you’re trying to figure out if you can smoosh a frozen apple pie into a glass dish and pretend you made it? I’ve made this casual promise twice in the last two weeks and I’ve been twice saved by this jalousie recipe. It’s made with canned pie fruit, frozen puff pastry and frozen blueberries. It’s easy as pie… or easy as jalousie.
What You Need
3 sheets of puff pasty
1 450gm can of apple pie fruit
500gms frozen blueberries
1 egg
2 tablespoons of almond meal
2 tablespoons of sugar
1 teaspoon of cinnamon
1 teaspoon of vanilla essence
What You Do
Mix the apple, blueberries, cinnamon, sugar and vanilla in a bowl
Brush with egg and bake in a 180 degree fan forced oven for 25 mins or until pastry is golden and brown.
It’s so easy and you can keep all the ingredients in your house for a ready to go emergency. I’ve made this with rough cut gluten free pasty and it was amazing. Just make sure you call it jalousie… because it’s hilarious.

Not a fancy dessert so much but my “OMG” what the heck can I bake up real quick because I promised the kids dessert. OR what can I make for their lunches I just remembered there are no biscuits etc is a super easy 5 minute chocolate brownie in the microwave. Now its not going to win any awards but its quick (I can from scratch to cooked in ten mins) and the kids love it.

That situation is exactly why I make double batches of cookies and then only cook one tray. Everything else goes in the freezer and I take it out and bake as needed. Bonus, it’s much easier to get a consistent size when the dough is frozen/refrigerated.

My fail-safe easy dessert is golden syrup dumplings. They’re delicious, hearty and you can make them in the microwave. That means that you can be swanning about, chatting to your guests while the yummy things are cooking instead of chained to the stove.
