LUNCH BOX ENVY: Quick and Healthy Chicken Salad Made from Taco Night Leftovers.

Living in a two person household, I have a bit of a struggle trying to use leftover food from our dinners that I inevitably over cater for. It’s not economical to cook half portions of family sized meals so we’re usually left with bits and pieces from several dinners in the fridge at the end of the week. Here’s a super quick and easy recipe I made on the weekend with all of our dinner leftovers.

Chicken Taco Salad

What You Need
  • 1 cold poached chicken breast (about 250gms)
  • 2 cups shredded ice berg lettuce
  • 1 tablespoon taco seasoning
  • 1 tomato, diced
  • ½ avocado, sliced
  • Taco Sauce
  • Shredded cheese
What You Do
  1. Shred the poached chicken and place in a zip lock bag with the taco seasoning. Shake well to coat chicken.
  2. Place lettuce, tomato, avocado and chicken in 2 bowls.
  3. Top with taco sauce and shredded cheese to serve.

 

Being my mother’s daughter I hate wasting food so getting a little creative with the containers of random leftovers in my fridge makes me a very happy little sausage. This recipe could also work with reheated mince meat or even tofu and beans.

    So, on one side, it sounds good. I may actually make something similar with the leftover chicken in my fridge.
    On the other, as a (born and raised) mexican, I cringed when I read “Cuisine: Mexican”. It more like “What americans have made the rest of the world think mexican cuisine is”.

    And please, please, please tell me, as I am extremely curious, what in the world does taco seasoning contain?

      Should I have said ‘American’? 🙂 I know how you feel, it’s like when I was in Europe when I was 19 and there were these weird stores called Australia that sold ‘traditional Australian fudge and ice cream’. I was like WTF? That’s not a thing.

      I just bought a packet mix of taco seasoning so like salt, spices, etc? Nothing too scary, there weren’t any numbered preservatives in it.

        I think the only cuisine every single country actually nails down is italian. Everything else get massacred.

      There’s just so MUCH FOOD AROUND ALWAYS! We’re actually having tacos again tonight because there’s so much left.

    I do ‘tumbledown’ meals and plan to have leftovers, that I basically just eat breakfast, lunch and dinner 🙂
