Yep. Caramel Coffee Upside Down Syrup Cake. I kind of invented it because when I like something I want it to be in everything… and I really like coffee. Specifically pod coffee because it comes straight from my kitchen and I don’t have to talk to people to get it.

Pod coffee is my favourite discovery of 2013, so when Woolworths asked me if I wanted to give their Caffitaly coffee machines a whirl I was all… obviously. I won’t lie… I’ve been eyeing off this sexy little beast for a while now. I have a well established habit of having coffee a couple of times a day at home and I may or may not have figured out a way to add alcohol to it… with great success. The natural next step was to add my beloved pod espresso to food and because coffee pizza sounds gross, I went with cake. And holy delicious mouth party this cake is amazing. Here’s how to make it.

Caramel Coffee Upside Down Syrup Cake

What You Need

1/2 cup of light sour cream

6 Caffitaly Caramel Indulgence espresso shots

200 gms soft butter

1 cup of brown sugar

1/2 teaspoons of vanilla bean paste

3 eggs

2 cups of self raising flour

1 cup of white sugar

What You Do

1. Preheat oven to 180 degrees celsius. Grease and line a cake tin (I used a square one but you can use whatever you have lying around.)

2. Whisk sour cream and 2 shots of coffee together in a jug.

3. Using an electric mixer and beat brown sugar and butter until pale and fluffy. (HINT: It takes a lot longer than you think… try setting the timer for ten minutes and see how you go.)

4. Add eggs 1 at a time, beating well in between.

5. Add half the sifted flour to the cake mix and stir well with a wooden spoon. Add half the sour cream mix and stir well. Repeat with remaining flour and sour cream mix.

6. Spoon batter into tin and smooth down. Bake for 45 to 55 mins and remove from oven when a skewer comes clean out from the centre of the cake.

7. Combine white sugar, 4 espresso shots and 1 teaspoon of vanilla paste in a small saucepan. Cook until mixture dissolves and then bring to the boil. Reduce heat and simmer without stirring for 15 minutes. Leave to cool as the mixture takes the form of a syrup.

8. Turn cake out and leave upside down. Drizzle cake with syrup when ready to serve.

Not surprisingly this cake goes really well with coffee. I made the coffee part of the cake with 6 espresso shots of the Caramel Indulgence Caffitaly pods. The flavoured pods are the best. I’m a touch on the calorie conscious side so I love the calorie free hit of sweet flavour in the caramel and mocha pods. It makes me feel like I’m a normal person with a properly functioning metabolism.

If you don’t have a pod coffee machine, I highly recommend the Caffitaly. It’s the perfect low commitment coffee machine option. It’s really little, so it fits on small bench tops and although I haven’t had the time to try, I’d be willing to bet it would also fit in the console of most large-ish cars… it’s just an idea I’m workshopping. Both the machine and the pods are available at Woolies so it’s super convenient. No ordering or traipsing to specialty stores on blessed Himalayan mountain tops to get your coffee fix. I think deep down we’re all a bit lazy so the lure of a supermarket convenience is tempting.

    I would once have said a cigarette but now, having quit (yay!) I would definitely say cake. An cake is good, but perhaps my favourite is my mum’s middle eastern breadcrumb cake with coffee icing. I’d be more than willing to try your new creation though…

    I love ice-cream and coffee. That hot and cold sensation, one scoop ice-cream (any flavour) followed by a sip of coffee. I guess I don’t have sensitive teeth hey?!

      Oh yay! You made them! Were they amazing? I made for the Christmas Day and my family PLOWED through them. They were squirelling them away for later. It got quite ugly.

    My parents used to own a cafe and my stepdad made the perfect coffee’s-friend biscuits – shortbready type things with hazelnut butter and espresso icing – a great pairing because they weren’t too sweet. Yum!

    I love my mother’s horse shoe almond cookies which remind me of being home. It’s also a traditional Christmas cookie and so easy to do for last minute guests. Although no one makes it quite like her.

        Yes those are the ones. I once misplaced the recipe and tried the Martha Stewart version they are far too sweet. It’s funny I mentioned the cookies , my mum baked a giant box for me for Christmas.

    My Greek grandad was a pastry chef who used to get up at about 4am to bake every morning. Which would have sucked, so he consoled himself by finishing his day at 11am with a very strong coffee, mini cigar and loukoumades (those little Greek doughnuts soaked in honey syrup). This combination, ideally with my grandad, would be the perfect coffee by far πŸ™‚

    I don’t have a home machine any more since it was permanently ‘borrowed’ by a family member, so I get my coffee out. My local does have these amazing house-made pistachio brownies which I drool over, but by far my favourite treat with coffee is the ubiquitous hot Melbourne barista with sleeve tatts. One of those to have at home would be delish. X

    Lindt chocolate! I was vegan for seven years, so this was the first year I was able to realise why the inlaws went crazy for those lindt bunnies at Easter time.

      Lindt chocolate is the BEST! I usually get the dark but I got the milk for a treat the other and holy bananas that was amazing!

    Imagine this.

    A slightly sweet hazelnut coffee beside a plate wth two slices of Vegemite and avocado on toast. The zesty taste of the Vegemite combined with the deliciously smooth texture and subtle flavour of the avocado – pop that on a slice of crunchy seeded toast and you are in heaven.

    After being a tea drinker for 32 years, my friend was on a mission to convert me to coffee, beginning with a Mocha. Every morning before we drove to work we would stop at Maccas and we would grab a coffee and one of their Macaroons. Now, without fail, I always associate coffee with Maccas Macaroons, even those weird apple pie flavoured ones. Best treat ever!

    Seeing as summer is in full swing, my favourite thing to have with coffee at the moment is ice! My morning routine now includes making a delicious and simple iced coffee with expresso, ice and cold milk. YUM!

    My favourite thing to have with coffee is Me Time! My daily routine involves a morning coffee directly after the Manic Antics of the school dropoff. Sometimes I grab a takeaway, sometimes I chat with friends, sometimes I just sit by myself and savour it, sometimes I indulge in a little flirtatious banter with my barista.

    Don’t get me wrong, I love school holidays and hanging out my little dude, Boyo. But … I do miss that daily 10 minutes to myself!

    Can I say apricot balls? I love apricot balls. I love them because a) they have condensed milk in them b) they have condensed milk in them and c) they have condensed milk in them. Also they are fruity. And they are BALLS. What could be better?! Apricot balls for the win.

    Plenty of milk and a splash of whisky (usually Macquarrie malt blend – it’s very affordable so it isn’t a tragedy to mix it, yet it’s also quite drinkable) on a cool day off.

    Ok, a really thick slice of banana bread, toasted, with proper butter, not margarine!! Banana brwad and coffee are best friends. And if I could be watching old eps of Veronica Mars at the same time without my husband making fun of it’s dodgyness the whole time, that would be a bonus!
