just got in a total panic when I realised I promised Mr Smaggle that I’d cook dinner tonight and I still have about 3 hours of work left to do. So I did the lazy thing and typed Easy Dinner into the search bar of Taste.com and FOUND A WHOLE SECTION OF EASY DINNERS! I started bookmarking a whole bunch and of them and then I realised it’s just rude not to share, so I’ve popped together a list of the top 5 easy dinner ideas that I’m keen to try this week.

30 Minute Frying Pan Lasange

 Part of the reason why I hardly ever make lasagne is because I HATE washing up the giant pan. Problem solved! I might try to make my low carb lasange or my mushroom and spinach lasange like this next time.

Tuna and Cherry Tomato Pasta

Mr Smaggle makes a similar version of this with prawns and basil but this would be a cheaper and easier alternative on busy weeknights.

I managed to track down some gluten free frozen pastry recently so I can actually try to make this.

I usually have a salad nearly every single day but sometimes a bowl of salad just gets super boring. I always think of rice paper rolls as novelty salad logs. They’re really easy and quick to make too.

    Those stuffed capsicums sound yummy. I love this colourful selection of food. Trouble is, if I served stuffed capsicums for dinner – my 2 men would look at me in bewilderment – then ask where’s the real dinner. Sigh.

      Stuff them with rice and meat! And cover them cheese! That’s how I get my man to eat them!
