300 Calorie Asian Omelette Recipe

bout 6 months ago I started doing the 5:2 diet. It’s been a bit of a game changer for me to be honest. I have the metabolism of a hibernating bear which means if I so much as look at a slice of bread, I gain 2 kilos as punishment. Since starting the 5:2 (where 2 days a week I consume just 500 calories) I’ve lost 5 kilos without sacrificing my Friday night treat dinners with wine. The reason why I’m talking about the 5:2 is that 300 calories has always been a fantastic figure for benchmarking how much I should be eating for each meal and it fits perfectly into every healthy eating plan I’ve ever tried. I’m not a spring a chicken anymore and even though I never experienced the joyful perk of youth that is a fast metabolism, my sluggish digestion is only getting more sluggish as I get older. Accidental weight loss is a thing of the past and I have to work much harder to ditch kilos than I used to. 300 calorie meals have been my saviour in the past year. It’s an easy way to keep track of what I’m eating without going all cray-cray about it.

300 Calorie Asian Omelette Recipe

Serves: 1
What You Need
  • Cooking spray
  • 1 egg (60gms)
  • 1 egg white
  • 1 tablespoon skim milk
  • 2 shallots
  • 1 clove of crushed garlic
  • Β½ red chilli
  • 100 gms green prawns
  • 50 gms button mushrooms, finey sliced
  • 1 tablespoon sweet chilli
What You Do
  1. Heat a fry pan on medium and spray with cooking spray. Add garlic, shallots and chilli and cook until fragrant.
  2. Add prawns and cook until they turn pink. Add mushrooms and cook until soft. Set aside in a seperate bowl.
  3. Whisk eggs and milk in a bowl and season with salt and pepper. Spray a little extra cooking spray in your pan and pour egg into the pan to make an omelette.
  4. When the omelette is almost cooked, sprinkle the stirfry on one half of the omelette and fold the omelette over to form a pouch.
  5. When the omelette is totally cooked, slide it off on to a plate and serve with a sweet chilli sauce.

This omelette is dead easy and very satisfying – perfect for a ‘2’ day dinner. I usually double the quantities to make one for Mr Smags too and he’ll have his with some toast or a little packet of heat up rice.

    This looks a cracker. My metabolism used to go at two speeds slow and stop, and since I lost my thyroid it doesn’t seem to go at all. I always have to watch what I eat (these days I put on weight just looking at food) but I always want to eat what looks good (ie, everything.) I’m not doing the 5:2 diet but I’m definitely going to bookmark this.

      That’s the beauty of 300 calorie meals – they’re just the perfect amount of food for those of us with super slow metabolisms!

    Love the 5/2 but feel the need to up the anti after 4 weeks of overindulgence… gained 4 kilos! Came off fast this morning with a zucchini omelette. My metabolism seems to be getting worse as I get older. Or maybe I’m kidding myself about how much I actually eat…and drink! Keep it up Ms Smaggle, I’ll be doing it with you.

      Did you stick to the 5:2 over Christmas? I took one week off and then started again and it was really hard! It’s felt like detoxing. I’m back on it though and counting calories on the other days and avoiding alcohol during the week!

        No not at all, in fact I think food and alcohol consumption hit record levels. Re-started Sunday and scales say I’ve lost 1.3 kg already. Same feeling, slight headache, craving alcohol and bread. Try to avoid alcohol during week and be very mindful of food on non-fast days. I find the beginning easiest time to lose then it gets harder. Goal weight seems like a distant bikini away.

    Oh I’m so glad to hear about another 5:2er. I’ve just kicked off with a girlfriend who has already lost a heap of weight doing it. I’m one week in and one kg down. 5kg by March is our first goal! Thanks for the recipe Carly.

      I lost all my weight early on and now it’s kind of maintenance… I need to be stricter on my 5 days to drop more weight! πŸ™‚

    I enjoy the 5:2 but right now I am mid-way through the Whole 30. Such a refreshment for my body. A great way to reset to healthy πŸ™‚

      Oh I tried to do the Whole 30 but I didn’t make it… maybe eggs was my issue. Can you have eggs?

        You can have eggs if you’re doing a straight Whole 30, but not if you’re doing the AIP version (auto-immune protocol.. which I started but reverted back to plain Whole 30) πŸ™‚

    This looks great, thank God you didn’t put chicken in there. Chicken mixed with eggs is wrong on so many levels!
    I have to start trying harder to lose my (7 year old) baby weight. I think the sneaky glasses of wine that I tell myself I deserve midweek are starting to show too! Why do I love all the things that are naughty!!! Its just not bloody fair. I wish so bad that I had been genetically blessed, but alas, I was hit with the fat stick :o(

      You know I don’t mind chicken and eggs! It’s a very Asian thing actually! I also have been hit with the fat stick but I came to terms with it when I was like 12. I don’t waste too much time worrying about it… I just eat the minimum amount possible most of the time!

    I can’t resist saying this smags!
    ‘I see food and eat it!’ … someone!
    no … I’m very careful about what I eat except for xmas time!
    nearly finished those chockies! … naughty!
    I sort of follow the high protein low carbs no processed! … chocs by the by!
    I don’t have a weight problem but I hate excersizing only dancing and yoga!
    I was impressed when i watched the doco on 5:2 and sig other was doing it for a while!
    I hate to think I’m missing a meal though! … my thing works for me!

  7. I totally over-indulged during my summer holidays (and enjoyed every second!), but was very ready to get back on track when the time came. I’m pretty sensible with what I eat and eat healthily for the most part. My biggest challenge this year is to find an exercise routine I enjoy and stick with it. I’d like to achieve consistency above all for my health. x

      I didn’t do too badly – I skipped of my 5:2 and it was really hard to get back on but I only gained a kilo and got it straight off so that was good! πŸ™‚

    I hear you sisters! My husband has a super fast metabolism and can eat absolutely ANYTHING without gaining (hate him for that) – he has been about 67kg (or less!) since I met him 35 years ago. At some stages I have weighed more than him – eek. About 18 months ago I dropped 11 kg. Started with tummy bug which took ages to regain appetite. Looking for a positive, I decided to change my eating habits and see if I could keep losing to a goal of 55kg. Nothing fancy, just smaller portions, little or no bread or sugar. I might be carrying little holiday weight (she says, not hanging from a balcony by Joey’s trousers), which is why I am now being really strict. Heard about the 5:2 – plan to investigate further because it sounds like a sensible way to treat your body. Ventured to the beach this morning with my 2yo granddaughter and wore a bikini for the first time in 35 years – and nobody pointed and laughed. I credit the lovely Mrs SY and her readers for inspiring me to do so.

      That is Mr Smaggle to a T – we’ve been on a holiday where we ate exactly the same food and did exactly the same exercise and he lost 3 kilos and I gained 5. It’s actually just really unfair.

    My thyroid issues and current meds have seen me pile on the weight in the last year. My metabolism and digestive system are suitable stuffed, which has me on a fairly limited diet but like the sound of this.

      Oh thyroid issues are the worst! I still have to get tested actually that’s on my list this year!

    I’ve been on steroids for the past 3 months because of a health issue (ulcerative colitis) so I’ve gained a lot of weight and fluid. This is the heaviest I’ve been in my life which is a little depressing. So this seems like a really good way to lose it (around 6kgs). I’ve heard of this diet before and my mum was doing it for a bit so I will definitely look into it, thanks!

    Questions about the prawns. I’m relatively new to cooking them and sometimes I find parts of them come out a little crunchy. Do you keep them still in the pan and flip halfway through or is it more of a moving around the pan constantly sort of thing?
    I definitely want to give this recipe a go. I stayed in holiday eating mode after London and now I’m having trouble snapping out of stressful Christmas chocolate eating mode.
