How To Make Your Own Super Food Breakfast Cereal

’m a huge lover of cereal but most cereals are packed with sugar and are basically glorified candy masquerading as a healthy breakfast. We’re also a gluten free house hold and whilst cafe style gluten free cereal is DELICIOUS, it’s also bloody expensive and I’m a bit tired of forking out $10 plus every few days for a teeny tiny box of the stuff.

On the weekend I realised I had a cupboard full of nuts, seeds and fruit and that it would be a brilliant idea to make some home made gluten-free cereal.

Here’s how to make your own super food breakfast cereal…

What You Need
  • 2 cups shredded coconut
  • 4 cups puffed brown rice cereal
  • 1.5 cup seeds (I used pepitas but you can use almost anything)
  • 1.5 cup nuts (I used flaked almonds and some chopped cashews)
  • 4 tablespoons chia seeds
  • 1 cup dried fruit (I used cranberries and sliced figs)
  • ½ rice malt syrup
  • ⅔ cup peanut butter
  • Large pinch of sea salt
  • 2 teaspoon vanilla bean paste
  • Cinnamon for sprinkling

What You Do
  1. Preheat oven to 175 degrees celcius. Place coconut flakes on a baking paper covered oven tray and bake for about 10 minutes or until brown. Watch it very carefully as it burns quite easily.
  2. Mix all the dry ingredients together in a bowl – puffed rice, nuts, seeds, fruit and baked coconut – and mix well.
  3. Place peanut butter and syrup in a separate bowl and microwave for about 1 minute or until the peanut butter is soft enough to mix into the syrup. Mix well then add vanilla and salt.
  4. Pour liquid mixture over dry ingredients and toss to coat. Make sure all the dry ingredients get coated in the mixture.
  5. Spread the cereal out on baking paper covered trays (you may need a few) and bake in the oven for 30 minutes, stirring every ten minutes. Watch carefully as it will burn quite quickly.
  6. Remove from the oven and allow to cool before storing in an airtight container.

 

Mr Smaggle has gone totally bananas for this cereal and has slammed through a whole batch in just under a week. Although it’s not totally sugar free, it has minimal sugar from the syrup and dried fruit so it doesn’t feel like you’re eating cake for breakfast.

This cereal would make a gorgeous hostess gift too. I popped some in a little brown paper package for my friend that I stayed with on the weekend and it was very well received!

    We went through a stage of making our own granola as an antidote to the crapola (cereal) that was on offer in the supermarkets. It was awesome. We now in our overnights phase which I guess is homemade cereal in wet form. Your version sounds delicious. What an awesome way to start the day!

    That sounds yummy! I could probably eat that by the handful anytime of day. I now have muesli every morning, but I didn’t like homemade muesli until a naturopath told me that oats need to be lightly cooked to make them easier to digest. Her “recipe” was to put a layer of oats on an oven tray and bake at 150 for 15 minutes, then layer over whatever seeds and nuts you like and cook for another 15 minutes. Cool and put in a jar. I sprinkle over a few sultanas and goji berries for sweetness when I serve it. Makes breakfast a no-brainer for me. Xx

    that looks good do you get bloat with that smaggs?
    must try some of that brown puffed rice!
    btw … have to say that you and Christine look like a formidable team!

    I make my own granola which is a great way to get seeds and nuts into my diet; plus was my way of testing our chia seeds for the first time. This looks yummy I’ll test it out – thanks for sharing

      It’s so good and really to make using just the stuff you’ve got at home. You can literally use anything it’s so good!

    I don’t make my own cereal, my partner is allergic to all nuts and I’m gluten-intolerant so we go with oats. They’re cheap, a box goes a long way, and it’s probably one of the best breakfast foods you can eat. 🙂

    This looks really nice. I did try my own granola and it was OK but probably not a recipe to repeat. Do you get the brown rice puffed ceraal thingys from the supermarket or a health food shop?
