r Smaggle has a little bit of a sweet tooth. I feel sorry for the poor bastard. We walk past bakeries and he presses his sad little nose against the glass and says ‘If I could eat wheat, I’d have a piece of that cherry slice! Or one of those apricot danishes… or an Anzac biscuit!’

So every now and then I ask him what he’d like me to bake for him and last week he came out with lemon and poppy seed loaf. He loves anything that can be served warm, with a cup of tea and slathered in butter. He’s such an old man. I had a bit of a play around with a few different recipes and combined them to come up with this. Most gluten free recipes are allergen free (no eggs or dairy) so I tend to use ‘real’ recipes and adapt them. Here’s a fairly standard gluten free lemon and poppy seed loaf recipe…

What You Need
  • 2 cups of gluten free self raising flour
  • ½ cup of caster sugar
  • 1 tablespoon baking powder
  • The rind of 1 lemon
  • Pinch of salt
  • 2 tablespoons of poppy seeds
  • 175gms of unsalted butter, melted
  • 1 cup of butter milk
  • 2 eggs
  • 1 teaspoon of vanilla bean paste
What You Do
  1. Pre-heat oven to 180 degrees celicus. Grease a loaf tin with butter and line with baking paper.
  2. Place all dry ingredients - flour, baking powder, sugar, salt and poppy seeds in a large bowl and combine with a wooden spoon.
  3. Whisk together all wet ingredients - milk, eggs, vanilla, lemon zest and butter - in a jug.
  4. Pour wet ingredients over dry ingredients and combine gently. Be super careful not to over stir it.
  5. Spoon batter into prepared cake tin and place in the oven.
  6. Bake for about 45 to 50 mins and rotate the cake halfway through to keep the cook even.
  7. Serve warm with an unholy amount of butter.

I’m honestly not the biggest fan of cake (I know I’m a freak right?) but I love watching Mr Smaggle heartily tuck into a slice of homemade lemon and poppy seed loaf. Also if I was making this for something fancy, it slather it with a thick cream cheese icing… but Mr Smaggle doesn’t like icing (I know right? What a weirdo. I’d almost rather eat a bowl of icing than a piece of cake) so I kept this one plain.

    Lemon and poppyseed – what a cracking combination! I think you and Mr Smaggle make a great team because he can eat all the cake and you don’t have to share the icing! My favourite cake is Bread Pudding (not to be confused with Bread and Butter Pudding) which was my nana’s speciality. It’s basically bread soaked in milk, then mixed with sultanas, sugar, apple, cinnamon, eggs and melted butter. It’s the bomb and it’s great served cold with a cuppa or warm with ice cream or custard. Now you’ve really got me thinking… I might have to try and make a gluten free version. (There’s a traditional version and a chocolate chip version on the blog.)

      And now I have bread pudding envy!! I love bread pudding cold with a cup of tea! I could devour the whole thing 🙂

        I adore baking! I’d do it every day if I had the time (and a decent oven!)

      I love the sound of the chocolate chip version but only because I think sultanas are evil and should be banned from all baked goods forever. They are more than welcome in fruit toast though. I have weird hot fruit issues.
