I

subscribe to a bit of a tough love principle around these parts. Everyone is busy and it can be hard to take care of our health sometimes but I truly do believe that everyone has the ability to get their 5 serves of veggies in every day. I understand that a lot of people don’t like vegetables but I have two things to say to those people.

1. Suck it up.
2. Be sneaky with those little health gremlins.

Here are 5 ways to eat well if leafy greens make you want to hurl…

Blend them into a smoothie

Green smoothies aren’t as gross as they look, I promise. Just make sure to add enough apple or orange to mask the green taste and it will feel just like drinking juice. If you still can’t stomach that, try popping a handful of baby spinach into a regular milk based banana or berry smoothie. It sounds weird and it will give it a greenish tinge but you won’t even taste it. It’s a great way to add an extra handful of veggies into your diet.

Hide them in bolognese

Make your favourite spaghetti bolognese sauce and had some defrosted and strained frozen spinach to the sauce. You won’t even notice it and you’ll get a decent hit of greens with your comfort food. Win.

Put them on a healthy hamburger

You can either load up a home-made hamburger with lots of leafy greens and tomato or you can make healthy zucchini based patties instead of fatty meat patties.

Hide them in a healthy lasagne

Make a lasagne as usual and just add a few layers of zucchini or ditch the meat entirely and just make a vegetarian lasagne. Using vegetables instead of lasagne sheets is a brilliant way to make healthy and tasty comfort food.

Make them into a dip

You can make healthy spinach, carrot and cucumber dips – just have a search through some healthy recipe blogs online for inspiration. You can even make dip out of beetroot. You also get extra points if you use veggie sticks instead of crackers!

Do you struggle to get enough veggies in your diet? How do you work them in without compromising your food joy?

Great article Carly. Having frozen spinach on hand is is a great idea. You buy the big bunch of spinach, clean, trim and cook it and end up with fuck-all.
I use a mandolin to make thin sheets of eggplant or zucchini to replace lasagna if I’m really wanting to kill the kilos…or that’s what I tell myself when I go back for the third helping!

Exactly! It feels like such a waste and frozen veg snap locks the the nutrients! I have a food processor that slices stuff and that’s what I use. I love it! Must make a veggie lasange actually… on my list.

I love greens but husband turns his nose up at them. I’ve become very cunning at hiding them in smoothies. I can’t hide the colour obvs but I can totally hide the taste. I find mango or frozen banana usually does the trick! I’ve also become an adept veggie smuggler in burgers, bolognaise, savoury slices and I’ll occasionally whip up a something with a spinach and feta combo because no one can say no to cheese (even with green bits.)

Mr Smags loves veggies but he hates preparing them. If I make lunch, it’s a salad and he loves it but if he makes lunch it’ll be tuna on toast. Nearly every day! He’s the same with fruit – he eats it if I cut up for him! So spoilt.

We love our veggies. So lucky with all 3 kids – introduced them right at the start and never had a problem. Many’s the time, when home by myself, I’ve sat down to a dinner of steamed vegetables – sprinkle of s&p and a squeeze of lemon, yum.

I’ve always been a fan of veggies, they just make me feel good! But I notice than when I cook for other people there are always veggies that they pick around. Like mushrooms or zuchini. I find it so weird.

  4. I must be a freak, because I freaking love vegetables! (See what I did there?)

I don’t have trouble eating veggies myself but I used to live with a bloke who absolutely hated them, so I got pretty awesome at hiding veggies in other foods. All of the above methods work beautifully. I also found that mixing it up and using a good variety of veggies was the key to working them into our diet seamlessly. If you try to use the same vegetables all the time it gets tiresome. But mixing it up and adding a few new additions to your veggie menu each week keeps it interesting, introduces new flavours and textures and makes it easier to think up new combinations that are tempting to the taste buds.

Another thing that helped was embracing herbs and spices. Vegetables don’t have to taste bland or bitter, all you have to do is add some herbs for a bit of extra flavour.

Oh totally! One of my favourite things to do is grab the recipes on Oh She Glows (vegan blog) and add meat to them. They’re AMAZING!!!

Eat vegies on a regular basis and the body will want to eat them. It’s hard at first but… be a freaking adult

I used to hate veggies, wasn’t until i was an adult that i actually started eating anything other than potatoes peas carrots and corn, still won’t eat cauliflower though .
But that is still all my other half will eat,oh and broccoli. I have given up trying to get him to eat more, will concentrate on trying to get the child to eat a more varied diet.
