Vietnamese Chicken with Vermicelli Salad
- 1 pack of Created with Jamie Vietnamese Style Half Chicken - $12.15 per kilo around $12 per pack
- 100gm packet of vermicelli noodles
- ¼ cup of coriander leaves
- ¼ cup of mint leaves
- 1 large red chilli finely chopped
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 large carrot finely sliced
- A handful of snow peas sliced diagonally
- Prepare chicken according to instructions on packet. Note: Chicken takes about an hour to cook so make sure you leave enough time.
- Place noodles in a bowl and cover with boiling water for 2 minutes until soft and roughly chop with scissors
- Combine noodle, carrot, snow peas, mint and coriander in a bowl
- Combine soy, fish sauce, brown sugar and chilli and pour over salad
- Serve with chicken on a plate
