Oat Bran Chicken Patties with Healthy Herb Mayo

After reading Sarah Wilson’s ebook How I Quit Sugar, I’m being a little precious about the sweet stuff. Especially in hidden sources like in… sauces. If trying to cut back on fructose, here is a low sugar, low carb recipe for healthy Chicken Patties with Healthy Herb Mayo

Chicken Patties

Prepare it

1 kilo of chicken mince

3 eggs

3 tablespoons of oat bran

200 grams of silken tofu

Cook it

1. Mash all ingredients in a bowl with a spoon (or hands, we all know that’s way more fun).

2. Scoop out 1/3 cup fulls of mixture into a non-stick fry pan.

3. Cook on low/medium heat until cooked through

4. Serve with vegetables and drizzle with Healthy Herb Mayo

 

Healthy Herb Mayo

Prepare it

3 tablespoons natural low fat yogurt

1 tablespoon of Dijon mustard

1 egg yolk

1 teaspoon of dried parsely

Salt and pepper

Make it

1. Whisk all ingredients in a bowl.

2. Drizzle it on things. Like the Chicken Patties.

I’m a chronic over caterer so I’ll be eating these for lunch everyday this week. They are great on burgers, with salad or even as an afternoon snack.
